    202 Fremont St.
         "Tradition!" they cry in "Fiddler on the Roof," and the return to glory for this downtown institution would make ol' Tevye's eyes water. Back when there were fewer places to celebrate anniversaries and prom night, locals would enjoy the "hot rocks" appetizers, salads tossed tableside and roses for the ladies. Still do, apparently, with Fiore at the Rio a second first-class choice.

    3595 Las Vegas Blvd. South
         We'll swing the other place and ring in the new, with this trendy spot that booted out Mickey D's prime real estate in the basement of the Barbary Coast. Victor Drais -- not Laszlo, though he was born in Casablanca -- is a Frenchman who duplicates his success on La Cienaga Boulevard in Hollywood, Calif., with an ornate new location featuring jazz combos in the lounge.
