Las Vegas is a barbecue kind of town. While we don't have the pork of Georgia or the beef of Texas or even the mutton of Kentucky, Las Vegans can satisfy their craving for slow-roasted, sauced meat at any number of local restaurants. One of the best places to chow down is multiple Best of Las Vegas winner Tony Roma's. Memphis Championship Barbecue, a winner two years ago and runner-up last year, placed second again this year.

We don't know exactly why the ribs at Carollo's are so good -- we suspect some sort of super-secret culinary covertness is involved -- but we do know the moist, sweet, tangy meat is fall-off-the-bone tender. Carollo's has won a number of local rib contests, but we suggest you enjoy your carnivorous feast in the restaurant's traditional steakhouse-type surroundings. The restaurant recently expanded its name to Fireside at Carollo's.
