Recipe found for vinegar-based barbecue sauce


Taste of the Town readers have come to the rescue of Leslie Hall, who is looking for a North Carolina-style vinegar-based barbecue sauce, despairing of the sweet ketchupy sauces she’s been finding.

Joyce Hambacher, a former resident of North Carolina, emailed, “Would you believe the closest I’ve come is in those BBQ packets at McDonald’s?” She also suggested Famous Dave’s, which has multiple locations in the Las Vegas Valley, as did Randy Leonard. A telephone call confirmed that Famous Dave’s sells the sauce in bottles.

And Steve Miller emailed that the best selection he’s found is at Glazier’s Food Marketplace, 8525 W. Warm Springs Road.

Shirley Stanfield sent in a recipe that she found in a recent edition of Taste of Home magazine.

TASTE OF HOME BARBECUE SAUCE

2/3 cup white vinegar

2/3 cup cider vinegar

½ cup ketchup

3 tablespoons (packed) brown sugar

1/3 teaspoon hot pepper sauce

¼ teaspoon salt

¼ teaspoon crushed red pepper flakes

1/8 teaspoon pepper

In a small saucepan, combine all ingredients; bring to a boil. Reduce heat and simmer, uncovered, 15 to 20 minutes, or until flavors are blended.

Marsha Ketaner sent in a tried-and-true recipe, which she said her family has been making for 40 years.

“It makes a lot,” she said.

BARBECUE SAUCE KETANER

1 gallon water

1 gallon vinegar

1 cup salt

4 ounces Worcestershire sauce

4 cups oil

Mix all ingredients.
