A hard-cooked egg is wrapped in bangers, fried and served with Guinness mustard sauce and pickled vegetables, $10.95.

L’oeuf de Poule

Joel Robuchon, MGM Grand

Chef Robuchon uses a crisply coated soft-boiled egg as the centerpiece of the dish that also features smoked salmon and Oscetra caviar, $235.

Bacon-Wrapped Bacon-N-Egg

Rx Boiler Room, The Shoppes at Mandalay Place

An egg prepared over easy rests atop bacon-wrapped bacon, on brioche toast with tomato jam, $12.

Lobster Benedict

Lavo, The Venetian

Poached eggs are served with a pound of lobster and Champagne hollandaise, $38.
