Tasting at Sage
Hundred Acre Wine winemaker Jayson Woodbridge will share stories as attendees are led through an unprecedented 16 Hundred Acre Single Vineyard Wines hand-selected from his personal library. Saturday, Dec. 9, 4-6 p.m., Sage at Aria, $500 gratuity inclusive + taxes.
Dinner at Jean-Georges Steakhouse
These will be wines Woodbridge has hand-selected, and each will be there for a good reason — a story, unique and truly Hundred Acre at its best. Paired with cuisine by the acclaimed three Michelin-starred Chef Jean-Georges Vongerichten … well, enough said. What can attendees expect at the luxurious Hundred Acre Wine events Dec. 9 at Sage and Jean-Georges Steakhouse at Aria?
There are two distinct parts. First, there is the tasting at Sage by Jayson Woodbridge, the owner and winemaker. We’ve been in business since 2005, and this is the first public tasting, a retrospective, that will include three perfect-100-point wines, plus a sneak peek of a Hundred Acre wine that won’t be released until April.

What are you looking forward to most at the tasting and dinner?
For me, we make wines that are very powerful and structural. These events showcase how the wines evolved over a 10-year period, the evolutions of our wine and wine-making style. The dinner at Jean-Georges Steakhouse is unique because Jayson has achieved 14 100-point scores, a U.S. and global record, and eight perfect wines will be featured at the dinner.
We’re pulling out some pretty unbelievable stops, and, from a food perspective, this is a celebrated French chef’s cuisine working with eight perfect Cabernets. It’s a unique challenge for the chef team. I’ve had a sneak peek, and it’s pretty unbelievable.
Why was this Hundred Acre Wine library sealed for 18 years?
Our wines are in very high demand. There is a five-year wait. The library selections are for the very best mailing list customers. With 14 perfect 100’s, we now have the body of work for a retrospective. It’s like having 10 Top 10 hits before doing a retrospective. Our first vineyard was in 1998, and now is the time to shine the light on the evolution of Hundred Acre Wine.
Why were Sage and Jean-Georges Steakhouse chosen for this unique experience?
Foremost, for Jayson to pair his wines, you want to be working with someone with an equal track record, someone with the gravitas like Chef Jean-Georges Vongerichten, who has had an unbelievable career in its breadth and experience, and with Sage you have the up-and-coming Shawn McClain, a James Beard Award winner, who represents the next generation.
Tell me something about Hundred Acre Wine that people would be surprised to learn.
Jayson is a self-taught winemaker, which is really rare. He didn’t go through schooling in Bordeaux or Burgundy. He has a really amazing story, and his style is different than others. Jayson built this himself.
