Scott Conant of ‘Chopped’ reveals Las Vegas menu, opening date

Scott Conant has set Feb. 16 as the official opening date for his Red Rock Resort eatery, Masso Osteria. The Italian restaurant will be located in the former Salute Trattoria Italiana.

The menu is to include whole sea bass al forno, tagliata di manzo, lamb shank, steak fiorentina, house-made stromboli, creamy polenta boscaiola, wood-roasted clams casino and pasta al pomodoro. The signature cocktail will be a drink called the Lightbulb, made with Bols Genever, Campari and sweet vermouth, that will benefit Keep Memory Alive’s work to prevent brain disease.

Conant has severed his ties with Scarpetta at The Cosmopolitan of Las Vegas, so this will be his only local venture. Because his Scottsdale, Arizona, home is just a 40-minute flight from Las Vegas, the chef plans to spend a lot of time in the new space.

“I’m never going to be one of those guys who doesn’t spend time in my own restaurant,” he recently told the Review-Journal. “It’s just not my personality. I love spending time inside restaurants. It’s what I want to do and where I want to be. I spend a lot of time doing a different things, but nothing is as interesting to me as spending time in the kitchen. It’s my first love, so to speak.”
