According to legend, 12th-century Mongol warriors heated their shields over open fires to grill food in the fields of battle. The food became known as Mongolian stir-fry, and you can do the same as you build your own bowl in a colorful, interactive, exhibition-style cooking setting. Start by selecting a protein (marinated steak, calamari, chicken, pepperoni, sausage, sliced beef, pork, scallops), seasoning (lemon pepper, Cajun, granulated garlic, yellow curry salt, cayenne), vegetables (bamboo shoots, baby corn, snap peas, green onions, Mandarin oranges, zucchini, tofu, water chestnuts), sauce (Dragon, Mongo BBQ, Ginger Citrus, Island Teriyaki, Red Curry Peanut, Sweet and Sour) and starch (brown rice, udon noodles, spiral pasta, fried rice). Among the Signature Bowls ready to order are Teriyaki Chicken, Firecracker (scallops, calamari, shrimp, Dragon sauce, water chestnuts, green onions), Beef Broccoli, Buddhist (vegetarian with honey soy sauce), Citrus Beef, Thai Chicken and Bayou made with chicken sausage, shrimp, marinated white fish, citrus garlic herb, tomatoes, Mongo Mix, roasted tomato sauce and steamed rice. Signature Bowls start at $8.99 for lunch and $10.99 for dinner. Genghis Grill is open from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday and 11 a.m. to 9 p.m. Sunday. — Jack Bulavsky
