ZUCCHINI ROLLUPS
Ingredients: Zucchini, Ricotta cheese, pasta sauce. Directions: Cut the zucchini with a mandolin into long slices. I bake the zucchini slices @ 400 degrees for 15 minutes. Then you stuff them with the ricotta cheese, place them in the sauce and bake again for ten more minutes.

SAUSAGE BISCUIT PINWHEELS
Ingredients:
2 Cups Bisquick
1/2 cup milk
1/4 cup butter
1 pound bulk hot (or mild) breakfast sausage such as Jimmy Dean
Directions:
1) Melt butter & blend with Bisquick & milk.
2) Refrigerate dough for 20-mins
3) Flour dough/board & roll out the dough to a 1/8-in. thick aprox, 20×14-in. rectangle.
Spread rectangle with the sausage .
4) Roll, jelly-roll style into long roll.
Place roll into freezer till firm enough to easily cut.
5) Preheat oven to 400º F.
6) Cut roll into thin slices & place on baking sheet. Bake till golden brown (about 15-mins.). Serve hot.
Make in advance and freeze rolls. Put in the fridge night before or thaw on the counter for an hour. I spray the pan with Pam. May add cup sharp cheddar cheese while reducing butter in half. If you don’t have large enough board use floured countertop or wax paper. Very addictive!

PIGSKIN POPPERS
Ingredients:
·        12 Medium Jalapenos
·        12 oz Whipped Cream Cheese
·        3-4 oz. of Cholula Sauce
·        1 package Lil’ Smokies (cocktail wieners)
·        1 package Thin Sliced Bacon
·        1 can Croissant Dough
Directions:
1.     Rinse and slice each jalapeno vertically. Deseed/core the jalapenos.
2.     Mix the whipped cream cheese and Cholula sauce in a separate bowl. Pipe (out of a Ziploc bag) or spoon the mix into each of the jalapenos.
3.     Place 1-2 Lil’ Smokies on top of the cream cheese depending on what will fit.
4.     Wrap the entire jalapeno in thin sliced bacon.
5.     Open the can of croissant dough and cut them into strips.
6.     Wrap the jalapeno with the strips of dough to surround the jalapeno but not completely cover. You can add as little or as much dough as you prefer.
7.     Cook on your smoker or in the oven at 350 degrees for 35 minutes.

PIZZA PUFFS

PIZZA PUFFS
Directions: 
Heat oven to 350 degrees
Spray baking pan with cooking spray
Ingredients:
Saute in saucepan:
1 tsp minced garlic
1/2 lb mild Italian sausage, not links
Blend together in small bowl:
1cup tomato basil pasta sauce
1/2 tsp parsley, 1/4 tsp each oregano and basil.
1pkg pepperidge farm puff pastry sheets cut into 12 4X6 inch pieces
Pepperoni slices
8oz mozzarella cheese shredded
Put small spoon of pasta sauce in center of each pastry, top with a small spoon each of sausage mixture, 2 pepperoni slices, and cheese. Fold each pastry closed and press edges together. Cut 3 small slivers in top of each pastry.
Bake in oven 20 minutes or until golden brown. Sprinkle small amount of cheese on each pastry. Put back in oven for a few minutes to melt the cheese. Remove and sprinkle each with parsley.
