Prime rib has been a Las Vegas dinner favorite since forever, and one of the best is at the Cortez Room. In fact, prime rib is the restaurant’s specialty, served flame-broiled or blackened with soup or house salad and choice of potato. There is the 10-ounce Queen cut, 14-ounce Prince cut and 22-ounce, bone-in cut, along with beef entrees, including filet mignon, 20-ounce Porterhouse and New York. House specialties are Steak Diane, Chicken Oscar with crab, asparagus and béarnaise sauce, and Seafood Olympia, a combination of salmon, scallops and shrimp in creamy tomato-basil sauce on angel hair pasta. Other seafood selections are grilled halibut, garlic-crusted orange roughy, Asian-glazed salmon, garlic shrimp scampi and twin lobster tails with drawn butter and lemon. Sides include baked potato, mashed sweet potatoes, creamed spinach, broccoli with cheese sauce and sautéed asparagus. Begin the meal with Oysters Rockefeller, crab cakes, French onion soup, wedge salad, shrimp cocktail, chicken lettuce wraps or Caprese salad, where beefsteak tomatoes and fresh mozzarella are drizzled with a tangy balsamic reduction. Ask about the pineapple upside down cheesecake. Prime rib begins at $16, and appetizers start at $6. The Cortez Room is open daily from 5 to 10 p.m. — Jack Bulavsky
