Food a key factor in success of Cottages of Green Valley
According to Trudy Andrews, Cottages of Green Valley administrator, the food provided at the Cottages of Green Valley has been praised by the residents of the memory care and assisted living community.
Residents are provided three meals each day with a menu that includes hot and cold meals. Breakfast features a cold cereal, waffles, pancakes, omelets, scrambled egg bowls, blintzes, quiche and juices.
Among the items provided at lunch are homemade daily soups, casseroles, lasagna, pot roast, fish and salads including Caesars, chef and Chinese chicken.
Among the choices of dinner specialties provided at the Cottages are Asian dishes, homemade meatloaf, chicken piccata, Southern fried chicken, fresh vegetables and fish entrées including mahi mahi, grilled salmon, cod and trout.
Lunch and dinner feature desserts including pies, cakes and pastry with an emphasis on the diabetic diet. Ice cream socials are also offered.
Special food events have included themed monthly candlelight dinners including roast prime rib with Yorkshire pudding, an Asian night with tempura shrimp, a winter brunch, monthly mock tail mixers, coffee socials with breakfast pastries every morning and bagels and lox offerings.
In addition, special days like Cinco de Mayo, Valentine's Day and Veteran's Day are highlighted with themed meals.
"You can't beat the corned beef and cabbage with carrots and peas topped off with apple pie," said George Dunn, who has lived at the Cottages for four years.
Jayne Straeby, who has been a resident for more than a year, also praised the food of the Cottages.
"The food is good," she said. "It is a good variety and I especially love the soups."
The Cottages of Green Valley, which opened in July 2002, offers one-story cottages with a capacity of 103 residents in the community.
