The holiday lights are on at the Las Vegas Springs Preserve, the 180-acre historic oasis of Las Vegas. The lights also are glowing at the Springs Cafe, now operated by the Culinary Academy of Las Vegas with a menu that promotes health and nutrition. While enjoying the impressive wrap-around balcony view of the Strip, enjoy a vegan burger with kale salad and vegan Parmesan vinaigrette, a Nature's Way roasted hamburger on a kaiser roll, chicken panini, crispy fish tacos with guacamole and salsa, turkey meatball with whole wheat pasta, chicken Waldorf salad, or select a daily special. Several pizzas are margherita, pepperoni, five cheese (mozzarella, provolone, jack, cheddar, fontina) and vegetarian with grilled zucchini, mushrooms, shallots and peppers. There is always the house tomato soup and soup of the day, along with salads such as Thai chicken, spinach, Cobb, wedge and Trio with egg, tuna and shrimp salad with fruit and artisanal rolls. Tasty desserts are cheesecake, homemade cookies and the Dessert Pizza with roasted apples and caramel topped with vanilla ice cream. Entrees and pizzas start at $7. The Springs Cafe is on the second floor of the gift shop. It is open from 11 a.m. to 3 p.m. Monday through Friday and 11 a.m. to 6 p.m. Saturday and Sunday. -- Jack Bulavsky
