Dining Pick of the Week: Old School Pizzeria

This special pizza is old-school because the dough is naturally leavened with a proprietary starter for five days (no commercial yeast), and all tomato products are preservative-free. It’s a modern-style pizza developed from ancient Roman traditions. The small pizza is the Big 14, followed by the Extra Big 18 and finally the OMG 24. Have an appetite when you arrive. Besides the traditional pizza toppings, several special pies are five cheese pesto, Hard Core Old School (wild broccoli, Mediterranean olives, hard-boiled eggs, white anchovies) and Vegas Meets Italy with China Ranch dates, pistachios, ricotta, tomatoes, triple-cream Gorgonzola, smoked Provolone, mozzarella, prosciutto and arugula. Then there’s the organic Crazy Good Chicken prepared with applewood smoke and fruit-infused stock, thyme and garlic and served with Yukon Gold potatoes. The antipasto salad, with house vinaigrette, has romaine, tomato, onion, mozzarella, Genoa salami, ham, Mediterranean black olives and roasted peppers. Gio’s Salad is tomato, cucumber, fennel, onion and mozzarella. Take home some cannoli, a loaf of bread and garlic rosemary bread knots. Pizzas begin at $11.99. Old School Pizzeria is open from 11 a.m. to 2 p.m. and 4 to 9 p.m. Tuesday through Friday and 2 to 9 p.m. Saturday.
