This is the time of year when something hot is the perfect meal, and that perfect meal is pho, a beef noodle soup that originated in Hanoi, Vietnam. You can order pho with tendon (gan), rare steak, tripe (sach), beef balls, chicken (ga), brisket or fatty flank (gau). It can also be ordered as veggies and tofu, seafood (do bien), shrimp, steak and tripe or steak and flank. As with many Vietnamese dishes, pho is served with garnishes such as Asian basil, rice paddy herb, cilantro, sliced green onion, lime juice and bean sprouts. Chef's specialties are beef stew noodle soup with rice noodles, seafood soup and tomato soup with crab, meat, tofu, escargot and vermicelli. Bun is cold vermicelli served with grilled pork and shrimp skewer, charbroiled pork patties, grilled honey chicken or honey shrimp, or egg rolls. Stir-fried entrees are served from 5 to 10 p.m. and include shrimp fried rice, stir-fried seafood with crispy egg noodles, lemongrass chicken with steamed rice, Shanghai lo mein with shrimp and stir-fried mixed vegetables.
