Carmine’s, founded in New York more than 20 years ago, opened an outlet at Caesars Palace this month. The 750-seat Southern Italian restaurant has the traditional decor of its sister restaurants in New York, Atlantic City, Washington, D.C., and the Bahamas, such as high ceilings, antique chandeliers and black-and-white photos of Southern Italian families to which Carmine’s culinary tradition traces its roots. Here’s a sample of the menu:

Cafe Fiesta opened in April as Station Casinos re-established its own coffee shops in place of chain operations. It serves breakfast, lunch and dinner and recently introduced Asian Fiesta selections in response to guest requests. The menu is designed to be not only neighborhood-friendly but also pocketbook-friendly, with all menu items less than $10.
Bally’s Steakhouse, one of the more venerable beef palaces on the Strip, will be replaced early next year by BLT Steak.
This week in Dining Out, Michael Mina Pub 1842, MGM Grand, 3799 Las Vegas Blvd. South. This casual tavern-style restaurant from the prominent award-winning chef, opened last month.
