Chef opening Kuma Snow Cream dessert shop

Jet Tila, who was opening executive chef at Wazuzu at Encore, opens Kuma Snow Cream on Friday at 3735 Spring Mountain Road. A variation of a Taiwanese dessert known as xue hua bing, snow ice or shaved show, snow cream is a sort of hybrid of ice cream and shaved ice and is made by freezing milk bases into blocks and then shaving them into ribbons. With a focus on Asian-influenced flavors such as green tea, taro and honeydew, it’s served with fruit, nuts and other toppings.

The shop will offer four or five core flavors and one or two seasonal flavors, plus 12 to 16 dry toppings and five sauces. There also are chef recommendations, such as black sesame snow cream with mochi balls, Oreo cookies and chocolate sauce. Hours are 11 a.m. to midnight daily. Call 702-816-5862. ...
