Readers offer more recipes for green-tomato relish

After I ran a request from Marge Phegley for a recipe for green-tomato relish like that served at the Hush Puppy, I received several from readers (and thanks to all of them). I haven't been to the Hush Puppy in quite a while, but I'm hoping that one of the two recipes that follow is a close approximation.

SWEET TOMATO RELISH

2 quarts green tomatoes, chopped

2 green peppers, chopped

2 cups chopped onion

1 pint cider vinegar

1/4 cup salt

3 cups sugar

1/2 cup pickling spice (in a cheesecloth bag)

Combine all ingredients; bring to a boil and then cook slowly for 30 minutes, stirring occasionally. Remove the spice bag.

Makes 4 pints.

— Recipe from Bobbi Butka of Ivins, Utah, who got it from "The All New Fannie Farmer Boston Cooking School Cookbook"

GREEN TOMATO RELISH

7 pounds ground and drained green tomatoes

3 pounds brown sugar

2 cups vinegar

1 stick cinnamon

12 whole cloves (in a cheesecloth bag, if you wish)

Combine all ingredients and cook until thickened. Then can, using a water-bath canner following manufacturer's directions, or freeze.
