Las Vegas cuisine may be difficult to define, but there are certain dishes that practically scream “old Vegas,” and chateaubriand is one. Availability may be lower than in years past, but there still are several good versions around, and fellow readers have suggestions for searcher John Peterson.

Dion Johnson recommended the Twin Creeks Steakhouse at the Silverton, 3333 Blue Diamond Road, and Spirou Khoury suggested Hank’s at Green Valley Ranch Resort, 2300 Paseo Verde Parkway in Henderson. …
