In response to T.A. Riggins, who’s looking for coleslaw similar to that which KFC used to serve, two readers sent recipes.
Dianna Harvey of Kingman, Ariz., said hers was from her sons, who worked for the company 35 years ago, and Barbara Link of Boulder City got hers from the “Best of the Best Recipe Hall of Fame Quick and Easy Cookbook.” They’re almost identical, so here they are, with slight differences noted.
KENTUCKY FRIED COLE SLAW
2½ to 3 pounds shredded cabbage
1 (1 ounce) carrot, shredded
½ to ¾ medium onion, finely minced or shredded
1 chopped green pepper (optional)
1 cup Miracle Whip
7/8 to 1 cup sugar
¼ cup tarragon vinegar
¼ cup salad oil
½ teaspoon salt
Pepper, to taste
Mix vegetables. Mix dressing ingredients with egg beater or whisk until well blended; pour over cabbage mixture.
Note: Link said she usually starts with half of the recipe for dressing and then adds more to suit her taste.
