Taste of the Town: Readers find pimento cheese to buy or make

Pimento cheese, the Southern staple being sought by reader Michaeline Logan, has been a frequent request to Taste of the Town over the years. The difference between then and now is that now it’s available locally.

Ann Brown and Bob Moudree found Kraft Pimento Cheese at Glazier’s Food Marketplace, 8525 W. Warm Springs Road (which is known for its East Coast products). Marlene Drozd found the same product at Smith’s at 9750 S. Maryland Parkway and Dottie Douglas found it at Albertsons at 2885 E. Desert Inn Road. Shirley Stanfield reported finding pimento cheese at Sprouts Farmers Market, which has five stores in the valley.

Stanfield also sent along a simple recipe for pimento cheese, which she said came from Woman’s Day magazine. It seems to be a little more healthful than a lot of commercial versions.

PIMENTO CHEESE

8 ounces reduced-fat cream cheese, at room temperature

½ cup low-fat sour cream

2 tablespoons fresh lemon juice

¼ teaspoon each salt and pepper

6½ ounces pimentos, finely chopped

6 ounces orange cheddar cheese, grated

6 ounces pepperjack cheese, grated

2 scallions, chopped

Whisk cream cheese, sour cream, lemon juice and salt and pepper. Fold in the pimentos, cheese and scallions. Turn into a shallow 2-cup baking dish and bake at 425 degrees until bubbling and light golden brown, 15 to 18 minutes.

Serve warm with chips and celery.

More on buckwheat pancake mix: Jim Guynup emailed that Fresh &Easy sells “wonderful buckwheat pancake flour. They are delicious, light and airy, plus very reasonably priced. No restaurant can match these pancakes.” (With the conversions of its markets that Fresh &Easy currently is undergoing, it’s unclear whether it’s still available.) And Hierro said Glazier’s carries Bob’s Red Mill buckwheat pancake and waffle mix.
