In case you’re wondering, MTO stands for “Made to Order,” and that is what chef Johnny Church is doing when you select one of his unique breakfast or lunch items. Egg dishes can be prepared as a wrap, an omelet or a skillet, and choices include the Broccoli (egg whites, spinach, Tillamook cheddar, jalapeno and mushrooms), the MTO (three eggs with choice of chicken sausage, turkey bacon, Spam or bacon, with mashed potato-stuffed hash browns) and Skuna Bay citrus-cured salmon. Featured pancakes are lemon poppy seed, and carrot and coconut with pecans and agave nectar. Popular wraps and sandwiches are Hen House (organic chicken), Celery Sucker (collard greens, quinoa, tzatziki, baba ganoush, tomatoes and cucumber), Reuben, Fat Elvis (French toast, banana, bacon, peanut butter, strawberries and Nutella), Hangover Burger (bacon, fried egg and Tillamook cheddar) and Tree Hugger (quinoa, corn, red pepper, spinach, onions, mushrooms and chipotle aioli). There are soups (tomato basil, French onion), salads (Caesar, Strawberry Fields) and desserts featuring MTO Mini Donuts and the delicious Fried Apple Rings with cinnamon-sugar-butter icing. Breakfast items start at $11. MTO Cafe is open from 7 a.m. to 3 p.m. Monday through Friday and 8 a.m. to 3 p.m. Saturday and Sunday.
