In the near-center of the west side of the Las Vegas Valley sits a diamond in the rough when it comes to Indian cuisine. Mt. Everest India’s Cuisine has made a former fast-food building into a cozy spot for delicious dining. With an expansive lunch buffet, the location gets hopping at noon weekdays, offering a variety that includes basmati rice, vegetarian matter paneer (chunks of homemade cheese and green peas in a creamy sauce) to rogan josh (tender cubes of lamb cooked in a mild curry-based sauce) and a slew of side salad options, including mint and mango chutneys. Dinner options include the lunch buffet offerings and more, such as appetizers (including vegetable samosas, chicken wings, soy beans and vegetable pakoras), rice biryani (vegetable, chicken, lamb or prawn in fried rice with Indian spices, herbs, nuts and raisins), tandoori chicken (cooked in a special clay oven with mesquite charcoal after marinating in yogurt, garlic, ginger, herbs and spices) or kababs (lamb or prawns). And don’t forget the unforgettable desserts: gulab jamun (similar to a dumpling in a syrupy sauce), kheer (rice cooked with milk, cashews, coconuts, dates, cinnamon, cardamon and saffron) or rusmalai (Indian cheese in a creamy sauce). Mt. Everest is open for lunch from 11 a.m. to 3 p.m. daily and for dinner from 5 to 10:30 p.m. daily.
