These are not your father’s hamburgers. These are hamburgers made from meats that are all-natural, free-range, grass-fed, humanely raised, sustainable and pesticide-free. The Kobe Burger, served on a freshly baked brioche bun, has truffle aioli, seared foie gras, frizzled onions, watercress, cherry tomatoes and a fried quail egg. Irish chef Conrad Gallagher and his wife, Candice, weren’t kidding when they wanted to create a new concept combining burgers with upscale cuisine. Other selections include organic lamb, wild boar, tuna tartare, organic vegetarian, venison and daily specials that might feature elk, ostrich, salmon, duck and oxtail. Among the toppings are hummus, Asian coleslaw, béarnaise sauce, cranberry relish and cheeses such as blue cheese, red cheddar, Gruyere and goat. Several sides are fat fries with garlic aioli and sea salt, skinny fries, crispy onion rings and corn on the cob with smoke chili butter. For the health-conscious, enjoy raw juices, including apple and lime juice, carrot with ginger, and Raw, a mixture of carrot, cucumber, orange, tomato, apple and basil. And, yes, there are upscale desserts, starring Granny Smith Apple Cobbler, Mango Upside-Down Cheesecake, Vanilla Panna Cotta and Milkshakes du Jour. Design-your-own burgers start at $9, and designer burgers begin at $16. PoshBurger Bistro is open daily from 11:30 a.m. to 11:30 p.m.
