Echo & Rig Butcher and Steakhouse in Tivoli Village, 440 S. Rampart Blvd., plans to host a free, live butcher demonstration from 1 to 3 p.m. Feb. 1. Get an up-close look as the team butchers a hind quarter of beef and learn about the cuts of beef the hind quarter provides. Echo & Rig will also explain the best ways to cook and prepare the meat to maximize flavor.

DISTILL HOSTING HIRING FAIR, PLANS FEBRUARY OPENING

Distill, 10820 W. Charleston Blvd., is set to open Feb. 22 and plans to host a hiring event from 10 a.m. to 6 p.m. through Jan. 31.

Available positions are bartenders, cocktail servers, food runners, line cooks, kitchen manager, dish washer and doorman. Applicants 21 or older are asked to bring a Health Card, Social Security card, driver’s license, Alcohol Awareness and Sheriff’s Card.

Distill, from the creators of Remedy’s Tavern and Elixir in Henderson, will be open 24 hours daily and will feature housemade cocktails and handcrafted food with a VIP Gaming Club. Happy hours are planned from 3 to 6 p.m. and 3 a.m. to 6 a.m. daily.

CHEFS TO THE MAX RAISES $275,799 FOR INJURED FOOD CRITIC

The first Chefs to the Max fundraising dinner to benefit injured food critic Max Jacobson was held Jan. 19 at RX Boiler Room inside The Shoppes at Mandalay Place, 3930 Las Vegas Blvd. South, and raised $275,799 to help pay medical bills for Jacobson, a food critic for Seven Magazine, who was struck by a car in December.

AL’S BEEF TO OPEN LAS VEGAS LOCATION

Native Chicagoans Ray Giddens and his son, Ray Giddens Jr., were set to open Al’s Beef at 6840 W. Sahara Ave. on Jan. 20. As part of the opening celebration and to mark the Martin Luther King National Day of Service, Al’s Beef planned to honor members of the community who volunteered at an official National Day of Service project with a lunch.

Via Brasil Steakhouse, 1225 S. Fort Apache Road, has added a new rodizio select menu available Monday through Wednesday for $29.99. It offers 10 all-you-can-eat meats with the full gourmet appetizer bar and side dish options.

The restaurant also is offering Porterhouse Thursdays in January, with an additional prime cut of meat at no additional charge.

For the Super Bowl on Feb. 2, specials are planned to start at 2 p.m., including a rodizio meal for $36.99 or only the salad/appetizer option for $19.99. The Executive Chef’s Culinary Classroom at the Bellagio, 3600 Las Vegas Blvd. South, has announced its schedule for 2014.
