One of the newest restaurants at Tivoli Village in Summerlin, Cantina Laredo specializes in modern Mexican cuisine and has an extensive menu of margaritas and hand-muddled mojitos. A sample of the menu:

Brunch: Crab Cakes Benedict, $11.95; Huevos Rancheros, $8.95; Chicken Fajita Omelet, $10.95 (prices include a Mimosa or Bloody Maria).

Starters: Top Shelf Guacamole, $8.95; Cantina Roll, $9.65; Ensalada de Mango y Pollo, $12.75.

Especialidades (dinner): Chile Relleno, $13.95 (beef) or $12.95 (cheese); Carnitas, $19.75; Cascabel Rib-eye, $24.95.

Tacos: Tacos de Carnitas, $13.65; Tacos de Pollo Cascabel, $12.75.

Enchiladas: Enchilada de Queso, $9.35; Enchiladas de Avocado, $11.50.

PROSCIUTTO, FRESH FIG AND MANCHEGO SANDWICHES

4 teaspoons Dijon mustard

8 (¾-ounce) slices Italian bread, toasted

1 cup arugula

2 ounces very thinly sliced prosciutto

2 ounces Manchego cheese, shaved

8 fresh figs, cut into thin slices

2 tablespoons fig jam

Spread 1 teaspoon mustard over each of 4 bread slices. Arrange ¼ arugula over each bread slice. Divide prosciutto evenly among bread slices; top evenly with cheese and fig slices. Spread 1½ teaspoons jam over each of the remaining 4 bread slices and place on sandwiches jam side down.

Serves 4.

REALLY FAST FOOD

Hot dogs and hamburgers they’ve got in abundance, but the Levy Restaurants chefs at the Las Vegas Motor Speedway keep coming up with new offerings, such as the BBQ Split that they’ll serve during the NASCAR races this weekend. You choose a barbecued meat and two of your favorite sides; it’s finished with two pickle spears and a cherry pepper, and you can drizzle with one of four sauces, $12.
