Hussong’s Cantina takes authentic Mexican fare off Strip

The original Hussong's Cantina in Ensenada, Mexico, may have started it all, but you could say the American version kicks things up a "nacho or two."

"This is our first fast-casual hybrid," managing partner Brian Mangino said of the new location at Boca Park, which took over the space formerly occupied by the now-closed Embers Grille + Spirits. "There are other fast-casuals, like a Five Guys or Panera or Chipotle, but no one had been able to grasp the bar aspect of a fast-casual. So, with the history of our margarita, which we invented in 1941, and our incredible bar program, which we run in our restaurants, we're ahead of the fast-casual curve."

There are no mariachi bands here — instead, the vibe features sounds from Eric Clapton, Kenny Loggins and the like. Flat-screen TVs ring the eatery, the center of which is anchored by a bar. But families can enjoy the experience on the other side, where there are walls covered in memorabilia, photos and license plates.

Order at the back food bar, where chef Noe Alcala's Mexican fare is listed on boards on the wall. The menu features a mix of classic, specialty and veggie tacos. Specialty tacos include Kung Pao shrimp with creamy garlic-chili sauce, cabbage mix and agave-roasted peanuts; achiote-rubbed ribeye tacos have guacamole, radish, pickled chile guero, onions and micro greens; and grilled salmon tacos have cucumber and roasted pepper mix, Sriracha aioli and micro greens. The seared pork belly tacos feature radicchio cabbage mix, maple bacon aioli and chicharones (pork rinds).

Taco selections also can be served as a salad or in a rice bowl, with vegan options available upon request. Sides include Hussong's signature street-style corn, cilantro rice and beans.

Not a meat eater? No problem. Try the Shrooms taco with beer-battered portobello mushroom, tahini yogurt sauce, kale, habanero rings and slivers of Parmesan cheese.
