Readers offer suggestions for bulgur wheat salad

After Ruth Burns asked for recipes for bulgur wheat salad, three fellow Taste of the Town readers responded.

Christine Datian sent her recipe for grilled chicken and bulgur wheat salad, which won a prize from Sunset magazine and was featured in an October Taste of the Town column; it can be found at https://www.reviewjournal.com/columns-blogs/heidi-knapp-rinella/taste-town-sunset-honors-local-resident-s-chicken-salad.

M. Nozaki had another option: "The best and easiest comes in a box by the Near East company," Nozaki wrote, adding that it's called Taboule Mix Wheat Salad and can be found in the foreign-food aisle of supermarkets.

Ann Brown sent the following recipe:

BULGUR SALAD

1 cup bulgur

4 green onions, finely chopped

1 1/2 cups chopped parsley

1/4 cup chopped fresh mint

1/4 cup olive oil

1/4 cup fresh lemon juice

Salt, to taste

Cover bulgur with cold water and soak for 20 minutes.

Drain bulgur, squeezing out as much moisture as possible. Add the rest of the ingredients, tasting and adjusting seasoning as desired. Cover and chill.
