Pancakes can be eaten at any time of day. There are 17 pancake selections at this pancake heaven, including buttermilk, honey whole wheat, cinnamon raisin, blueberry, carrot, red velvet, banana cream pie, white chocolate macadamia nut, lemon ricotta and Rocky Road with almonds and marshmallows in chocolate batter. Other popular breakfasts are Cora's homemade corned beef hash and eggs, Belgian waffle, Portuguese sausage and eggs, spinach or kalua pig Benedict, four-egg omelets, Nutella crepes, honey toast and build-your-own skillet layered with potatoes, two eggs and assorted toppings (tomatoes, garlic, bacon, ham, ground pork, jalapenos). Breakfast specialties include huevos rancheros, Spam scramble and Rick's adobo fried rice, a Filipino dish with marinated chicken and rice wrapped in an egg with green onions. Sandwiches, served with fries or salad, include patty melt, BLT, Reuben, avocado chicken burger, grilled cheese and chili cheeseburger with fried egg. A short stack (three pancakes) starts at $4.50 and sandwiches at $6.95. BabyStacks Cafe is open from 7 a.m. to 2 p.m. Monday through Friday and 7 a.m. to 3 p.m. Saturday and Sunday. - Jack Bulavsky
