Le Cirque’s spring menu has French flair

Feel like treating yourself? Le Cirque at Bellagio, 3600 Las Vegas Blvd. South, has introduced its spring menu, which emphasizes skilled French cooking techniques and top-notch seasonal ingredients.

It’s $250 per person, and includes:

Florida frog leg lollipops with morels, Swiss chard, fiddlehead ferns, white asparagus and bernaise;

Colorado lamb loin with baby turnips, carrots, morel mushrooms, sauteed sweetbreads and sauce forestiere;

Maryland blue crab with Russian osetra caviar (shown);

Chilled English peas veloute with carrot nest and crispy mint;

And spring salad of pea tendrils.
