The recipe for success at Distill is to mix a bit of swagger with a dash of class. Walking into the new Southern Highlands location — the original is on West Charleston Boulevard across from Red Rock Resort — one notices the subdued colors, including wood table tops and subtle hints of gold. A wall with a brick facing adds texture, and the muted lighting provides an intimate feel. A bank of large glass windows allows diners to see the plethora of TV monitors flanking the bar while keeping secondhand smoke at bay. But you’re here for the food, and Distill does not disappoint. Appetizer choices are extensive and include beer-battered onion rings, street tacos, pretzel bites, jumbo stuffed chicken potato skins and Buffalo chicken wings or fingers. The menu is also burger-friendly, with USDA Choice ground chuck. The Cure (about $10) blends ground beef and pork with Fontina cheese and is topped with soy-marinated onions, jalapeno jelly, lettuce, tomato, spicy mayo and fried parsnips on a brioche bun. Have your attention? The Western Bacon Burger grills ground chuck with Distill’s house barbecue sauce, applewood smoked bacon, cheddar cheese and onion rings. The California Garden Burger is for vegetarians, with marinated roasted sweet peppers, baby greens and honey Dijon. There’s also a turkey burger. A build-your-own option lets you select your cheese (cheddar, pepper jack, Swiss, crumbled bleu cheese, Provolone, American) and toppings. If you’re really hungry, double your burger for $4. Entrees come with salad or soup and start at about $12. Choices include grilled petite filet marinated in South-of-the-Border herbs and spices, center-cut boneless pork loin chops with a port demi-glace, beer-battered fish and chips using Icelandic cod, roasted bourbon barbecue chicken and penne chicken pasta with cream sauce. Join the rewards club, RED Loyalty, and earn points with every dollar at any of Distill’s affiliates (RED stands for Remedy’s, Elixir and Distill, all which have the same ownership). Distill is open 24 hours daily.
