Costa di Mare offers tasting-menu options

Wynn Las Vegas' signature seafood restaurant, Bartolotta Ristorante di Mare, was reborn as Costa di Mare Oct. 19, following the departure of chef Paul Bartolotta and "arrival" of Wynn veteran chef Mark LoRusso, late of the Wynn/Encore restaurants Tableau and Botero, and former executive chef of Aqua at Bellagio. The restaurant continues to import sustainably sourced Mediterranean seafood from every region of Italy. It offers two tasting-menu options, priced at $160 and $195 per person, and a la carte dishes. A cordial cart includes Italian dessert wines, grappa and amaro, port, madeira and other cordials, and in addition to the interior seating, it has semi-private tables surrounding the resort's lagoon. Here's a sample of the menu.

Antipasti: Grilled Ligurian octopus with crispy potatoes and arugula, $26; sauteed tiny clams with tomato sauce and white wine, $19; grilled jumbo imperial red shrimp, $30 each; Osetra caviar, $200 for 30 grams, $275 for 50; insalata mista, $14.50; assorted salumi with fried crescentine bread, $26.

Appetizer pastas: Cuttlefish ink tagliatelle with cuttlefish, shrimp and lobster, $27.50; Venetian spider crab ravioli with artichokes and tomato, $26; papparadelle with porcini mushrooms, $18; cavatelli with creamy tomato sauce, $15; butternut squash tortellini, $17.50.

Main courses: Whole fish, $16 per 100 grams; crustaceans, $22 per 100 grams; Ligurian-style roasted chicken, $32; roasted rack of lamb with eggplant and chickpea fries, $58; 40-ounce bone-in porterhouse for two, $150.
