Authentic Mexican cuisine meets owner’s New Mexican roots at Phat Phrank’s

A “Now Open” sign drapes over Phat Phrank’s Mexican Kitchen at 4850 W. Sunset Road. But make no mistake — owner Frank Miranda is no newbie to the food industry.

Opening in 2009, the eatery’s name is derived from Miranda’s nickname, “Fat Frank.” His grandchildren told him “phat” meant “cool,” and so the name became more endearing.

Originally from Southern California, Miranda combines authentic Mexican cuisine with his New Mexican roots. Various musical instruments decorate the restaurant’s white walls while rock-and-roll songs spill from the speakers. It’s a very different feel from the rather colorful, traditional Mexican restaurants, but the food is still on par.

While offering some Americanized plates, such as Mama Maria’s Enchilada (flat-stacked cheese enchilada topped with a fried egg) and carne asada fries (french fries topped with steak, beans, cheese and pico de gallo), diners can still expect their favorite authentic dishes, including Miranda’s famous adobada torta (with cheese, cabbage, lettuce, tomato, onion, cilantro and secret sauce) and ceviche (pollock, cilantro, tomatoes and onions marinated in lemon juice and spices).

Other dishes include salads, tacos, burritos, tostadas and breakfast burritos. Most plates come with your choice of adobada, barbacoa, carne asada, carnitas or chicken. Prices range from $4.89 to $9.99.

Still, why the “Now Open” sign? Some things are better left a mystery.

Phat Phrank’s is open from 7 a.m. to 7 p.m. Monday through Friday, 10 a.m. to 3 p.m. Saturday and closed on Sunday.
