The Midnight Rambler is one of Honey Salt chef and co-owner Kim Canteenwalla’s favorite cocktails. It’s a surprisingly balanced drink, considering the large dose of honey.
■ 2 ounces honey
■ 2 ounces Bulleit bourbon
■ 10 dashes bitters
■ Candied ginger
■ Orange peel
Build in a glass, starting with honey, and stir. Serve with ice sphere. Garnish with a candied ginger and orange peel.
